Sausage and fennel gnocchi

Ingredients
- 6 sausages
- 1 onion
- 1 fennel bulb
- 2 garlic cloves
- Splash of white wine
- Chicken stock
- Frozen spinach blocks (about 6)
- 250g tub of mascarpone
- Lemon
Method
- Take the skin off the sausages and tear them into chunks to fry in a pan
- Meanwhile thinly slice the onion and fennel (chop in half lengthways and then slice)
- Once the sausage is browned, remove from pan
- Fry the onion and fennel gently in a little oil until soft
- Add the finely chopped garlic and cook for 1 min
- Add a splash of white wine to the pan; reduce
- Add some chicken stock (cube fine)
- Add the gnocchi, frozen spinach, some lemon zest, and sausage
- Cook through for around 5 mins
- Stir through mascarpone and cook for another 2 mins until warmed through
- Season and serve
