Prawns with chilli, garlic and lemon
By Dave · Fish · 1st October 2010 A quick and tasty way to cook prawns. You'll need to get some nice raw prawns.
Ingredients
- 12 large king prawns with shell and head on
- 2 fresh red chillies
- 2 garlic cloves
- 1 lemon
- Chopped parsley
- Good olive oil
- White wine
Method
- Remove the head from each prawn, leaving the shell on; put the heads to one side
- Heat a large frying pan with oil
- Add the prawns flat in the pan
- After a minute or so add the garlic and chilli. They will both cook quickly so keep a close eye, especially on the garlic
- After a couple of minutes, add a splash of white wine (maybe a glass or so)
- Squeeze the brown meat out of the prawn heads into the pan to thicken the juices (and make it go a lovely red colour)
- The prawns should cook within 3 or 4 minutes; once cooked remove from the heat
- Squeeze in the lemon juice and add parsley
- Serve
Notes
These can be a slight pain to eat due to the fact that the shells are left on; but they are worth it. Squeezing out the heads is a top tip!
